The Westin Whistler opened Grill & Vine late last month to boast a revitalized look that is modern and sleek with dark slate tiles, walnut communal tables and incredible mountain views. The restaurant seats 105 and offers “traditional favourites with a local twist”, as well as an array of local and international wines.
The revamped, elegant looking restaurant replaced the dark and gloomy, terribly carpeted Aubergine.
I stayed at The Westin during my time in Whistler for Cornucopia and was able to pop into the restaurant to chat with Executive Chef Bradley Cumming over a quick bite to eat. Chef Cumming crafts food with the notion of allowing the natural flavours of the ingredients to express themselves, so you’ll often find “simple” dishes composed of high quality, local ingredients.
Grill & Vine’s signature items include the Margherita Pizza and Louis Lake Steelhead, but I was a major fan of the tender and rich Brasato Beef Short Rib on creamy carnaroli rice and the Cacciatore with a sunny side up egg.
With the renovation comes a brand new Wood Stone hearth oven (shown above). This oven presents a bit of a learning curve for the culinary team as they test out how it distributes heat and the time it takes to cook in comparison to a traditional commercial oven. In it they will be cooking a variety of dishes including steelhead, steaks and pizzas.
In addition to the oven, Grill & Vine has also installed an Enomatic Wine Preservation System which will hold 16 high-end, unique wines by the glass. Chef Cumming displayed how it worked as he punched in a 5 oz pour of Burrowing Owl Merlot for me. The advanced system will streamline operations as it is run on a card system that tracks ounces poured, as well as servers pouring. Wine is also available by carafe or bottle.
Grill & Vine is open for breakfast and dinner year round, as well as for après ski in the winter. Also incorporated into the restaurant is an all day Grab & Go with Starbucks® espresso coffees and a variety of take out snacks.
